Eggs have a low GI count, just make sure you buy organic and cage-free eggs as the hens in commercial hen houses are often sickly and pumped full of chemicals to mass produce as many eggs as possible. This is bad for the chicken and you, so support your local farmer who offers his chickens room and does not force shots on them to produce more eggs than is recommended.
